My favorite Christmas traditions! #3. Christmas cookies

Twas the Monday before Christmas and all through the house, every surface was covered with powdered sugar.

Seriously, my kitchen looks like a nuclear war between powdered sugar and green food coloring went down over the weekend. And the unnatural amount of Christmas parties I attended this weekend kept me from properly cleaning it up. So maybe while I’m at work today, Lula can have a field day licking sugar from all low-to-the-ground surfaces.

To be perfectly honest, Christmas cookies might’ve made it higher on my countdown of favorite Christmas traditions if mine had turned out just slightly better than they did. I make some sort of Christmas cookie every year, but this was my first attempt at real frosted sugar cookies. I used Blonde Design’s cream cheese sugar cookie recipe and frosted them using Bake at 350’s flood icing technique, as seen on The Pioneer Woman.

I only made half the batch this time. The other half of cookies is still in my freezer, awaiting red and white flood icing. What I will do differently next time:

1. I outlined the cookies with royal icing first. This worked really well with the green icing, since I had added a ton of liquid green food coloring to it. The white icing, however, could’ve used a little bit of water  because it was very difficult getting it to stick to the cookie and it made a big goopy mess. However, once I added water to both colors and used the flooding technique, it went on smoothly.

2. Note to self: One batch will frost WAY more cookies than you think. I split mine into green and white and used that to frost half my cookies but ended up throwing out a TON of leftover icing. And now I’ll have to make another batch of red and white to frost the other half. Ha.

3. The recipe recommended adding light corn starch to give the icing a glossy sheen. Maybe I didn’t add enough because I felt like the icing looked VERY matte.

Let’s hope I get a chance to frost the rest this week, or I’m stuck with a bunch of candy cane and Santa hat cookies after Christmas!
